Red Velvet Cupcakes

I am attempting to make red velvet cupcakes for a party today. They taste yummy - but don't look very red - how red are they supposed to be?? The batter was a nice color - but now they look like a light chocolate. At least they taste good! Got any suggestions for the red part?

Oh my is right! Where does the time go? I can't believe it has been 5 months since I last blogged!!! 5 MONTHS????!!!!! Yikes - time goes by fast. I admire those bloggers who can keep up with daily or weekly posts. You are my inspiration! So do I quickly go over the last 5 months - or start anew? Well...what started me back. Mid-winter blahs!! Feeling lonely, missing my family and friends like crazy so I feel the need to reconnect - maybe this will help. So I probably won't write every day - but hope to get back into at least once or twice a week with stories about CJ and stories about being a teacher. This should be my year to blog about teaching as I am loving almost every minute of it this year - and it has been a long time since I have been able to say that! So...check back friends and family I'm back with stories and pictures to share!
